Pepper jelly
Ingredients/Components
- sugar - 7 c
- pkg - 1 oz
- vinegar - 1 c
- green food coloring - 1 item
- large jalapeno peppers - 3 item
- green bell peppers - 8 item
How to make pepper jelly:
Grind peppers and drain well. Use juices, enough to make 2 cups (can use blender and blend peppers, use pulp and juice).Using an 8 to 10-quart granite or stainless steel pot, combine sugar, vinegar and pepper juice or puree and bring to a full, rolling boil. Add pectin. Boil vigorously for 1 minute. Remove from heat; let stand for 5 minutes. Skim. Add several drops of green color. Pour into hot, sterile jars. Leave 1/2 inch headspace. Seal.
Serve with cream cheese and toast or pork.
