Pecan pie muffins
Ingredients/Components
- all-purpose flour - 1/2 c
- large eggs - 2 item
- brown sugar, firmly packed - 1 c
- butter, melted - 1/2 c
- pecans, chopped - 1 c
How to make pecan pie muffins:
Combine first three ingredients in a large bowl. Make a well in the center of mixture. Beat eggs until foamy. Stir together eggs and butter. Add to dry ingredients, stirring just until moistened. Coat muffin pans with cooking spray. Spoon batter into cups, filling 2/3 full. Bake at 350° for 20 to 25 minutes or until done.
