Ingredients/Components
- flour
- oleo 2 sticks, cut in pieces - 1 c
- sugar - 1 c
- salt - 1/2 tsp
- eggs - 4 item
- light or dark corn syrup
- vanilla
- oleo, melted - 3 Tbsp
- pecans
How to make pecan cookies:
Preheat oven to 350°. Spray a 15 x 10 x 1-inch pan with nonstick spray. In a large bowl, with mixer on medium, beat flour, 1 cup oleo, 1 cup sugar and salt. Mixture will resemble fine crumbs. Press firmly into prepared pan. Bake 20 to 23 minutes or until golden brown.In a large bowl, mix eggs, corn syrup, vanilla, 1 1/2 cups sugar and 3 tablespoons melted oleo, until well blended; stir in pecans. Pour immediately over hot crust; spread evenly. Bake 25 minutes or until firm around edges and slightly firm in center.
