Ingredients/Components
- sugar
- vanilla ice cream - 1 qt
- water - 3 c
- heavy whipping cream - 1 c
- large pears - 4 item
- dark rum optional - 2 Tbsp
- vanilla extract see note - 1 piece
- good quality semi-sweet chocolate, cut into pieces
How to make pears helene:
Hot Fudge Sauce:8 oz. good quality semi-sweet chocolate, cut into pieces1 c. heavy whipping cream2 Tbsp. dark rum (optional) Core, peel and halve pears. Combine water and sugar in a medium saucepan. Bring to a boil, stirring until all sugar is dissolved. If vanilla bean is used, add it to the liquid. (Note: If using vanilla extract, add it after pears are cooked and saucepan is removed from heat.) Simmer until pears are tender, about 10 minutes, turning once. Cool the pears in the syrup.Hot Fudge Sauce: Place all ingredients in a small, heavy saucepan. Heat over gentle heat until chocolate softens. Whisk until mixture is smooth and glossy. Serve warm. Makes about 2 cups.
Serving Pears: Place pears, cut side down, on a scoop of ice cream. Spoon over the Hot Fudge Sauce. Serve immediately. Makes 8 servings
