Peanut butter oatmeal cookies

Ingredients/Components

• eggs - 3 item
• vanilla - 2 tsp
• packed brown sugar - 2 c
• salt - 1 tsp
• baking soda - 2 tsp
• shortening
• peanut butter
• quick oats - 3 c
• whole wheat flour - 2 c

How to make peanut butter oatmeal cookies:

Cream shortening and peanut butter. Add brown sugar, eggs and vanilla. Combine flour, soda and salt. Add to creamed mixture. Add oats and mix well. Drop by rounded teaspoonfuls onto ungreased baking sheets. Flatten with fork. Bake at 350° for 12 minutes. Yields 6 1/2 dozen.

Variations: Add chopped peanuts or shredded coconut.
