Ingredients/Components

  • salt - 1 tsp
  • margarine - 1/4 lb
  • white pepper - 1/4 tsp
  • medium onion, chopped - 1/2 item
  • chicken stock or bouillon - 1 c
  • thyme - 1/2 tsp
  • tarragon - 1/2 tsp
  • finely chopped celery - 3/4 c
  • rosemary - 1/2 tsp
  • chopped oysters
  • coarse white bread crumbs, loosely packed

How to make oyster dressing:

Pull crumbs from crusts of 3 or 4 day old bread. Disregard crusts. Add salt, seasonings and pepper; toss. Melt margarine, add celery and onion. Saute until just softened, then stir in oysters. Pour over bread crumbs with chicken stock. Mix lightly with fork or hands. Put in 8 x 11 x 2-inch baking dish and cook, uncovered, in 350° oven for one hour. Yields 6 servings.
