Oyster dressing
Ingredients/Components
- salt - 1 tsp
- margarine - 1/4 lb
- white pepper - 1/4 tsp
- medium onion, chopped - 1/2 item
- chicken stock or bouillon - 1 c
- thyme - 1/2 tsp
- tarragon - 1/2 tsp
- finely chopped celery - 3/4 c
- rosemary - 1/2 tsp
- chopped oysters
- coarse white bread crumbs, loosely packed
How to make oyster dressing:
Pull crumbs from crusts of 3 or 4 day old bread. Disregard crusts. Add salt, seasonings and pepper; toss. Melt margarine, add celery and onion. Saute until just softened, then stir in oysters. Pour over bread crumbs with chicken stock. Mix lightly with fork or hands. Put in 8 x 11 x 2-inch baking dish and cook, uncovered, in 350° oven for one hour.
