  • vanilla extract - 1 tsp
  • butter - 1/2 c
  • large eggs - 6 item
  • light corn syrup - 2 Tbsp
  • whole milk
  • packed dark brown sugar - 1 c
  • white sandwich bread slices - 12 item

How to make overnight caramel strata:

Combine sugar, butter and corn syrup in heavy small saucepan. Stir mixture over medium-low heat until butter melts and sugar dissolves. Bring to boil. Pour into 13 x 9 x 2-inch glass baking dish. Tilt dish to coat bottom evenly; cool. Arrange 6 bread slices in single layer atop caramel, trimming bread to fit. Create second layer in same fashion. Whisk milk, eggs and vanilla in bowl to blend. Pour over bread. Cover and chill overnight.

Preheat oven to 350°. Bake strata uncovered until bread is golden-light brown and puffed, about 40 minutes. Let stand 5 minutes. Cut into 6 portions, invert each piece so caramel sides is up. Serve with fresh fruit. Such as strawberries, kiwi fruit and pineapple.
