Orange chicken
Ingredients/Components
- salt - 1/4 tsp
- vegetable oil - 1 Tbsp
- orange juice - 3/4 c
- mustard - 1 tsp
- whole chicken breasts - 2 item
- garlic clove, minced - 1 item
- black pepper - 1/8 tsp
- chopped green onion - 2 Tbsp
- chopped red pepper - 1 c
- cornstarch, dissolved in 2 Tbsp - 2 tsp
- fresh parsley for garnish - 1 item
- fresh orange sections, cut into bite size pieces - 1/2 item
How to make orange chicken:
In a large non-stick skillet over medium-high heat, heat oil. Add chicken and brown. Remove from skillet. Add red pepper, green onion and garlic. Cook, stirring occasionally, 5 minutes or until tender. Return chicken to skillet. Add orange juice, mustard, salt and pepper. Bring to a boil. Reduce heat. Cover and simmer about 20 minutes. Transfer chicken to serving platter. Keep warm. Add cornstarch mixture to skillet.Increase heat to high; add orange sections. Cook, stirring frequently, 1 to 2 minutes or until thickened. Pour over chicken. Garnish with parsley. Makes 4 servings.
