Ingredients/Components

  • salt - 1/4 tsp
  • vegetable oil - 1 Tbsp
  • orange juice - 3/4 c
  • mustard - 1 tsp
  • whole chicken breasts - 2 item
  • garlic clove, minced - 1 item
  • black pepper - 1/8 tsp
  • chopped green onion - 2 Tbsp
  • chopped red pepper - 1 c
  • cornstarch, dissolved in 2 Tbsp - 2 tsp
  • fresh parsley for garnish - 1 item
  • fresh orange sections, cut into bite size pieces - 1/2 item

How to make orange chicken:

In a large non-stick skillet over medium-high heat, heat oil. Add chicken and brown. Remove from skillet. Add red pepper, green onion and garlic. Cook, stirring occasionally, 5 minutes or until tender. Return chicken to skillet. Add orange juice, mustard, salt and pepper. Bring to a boil. Reduce heat. Cover and simmer about 20 minutes. Transfer chicken to serving platter. Keep warm. Add cornstarch mixture to skillet.

Increase heat to high; add orange sections. Cook, stirring frequently, 1 to 2 minutes or until thickened. Pour over chicken. Garnish with parsley. Makes 4 servings.
