Ingredients/Components
- eggs - 5 item
- flour - 5 c
- buttermilk - 1 qt
- baking soda - 5 tsp
- boiling water - 1 c
- dark brown sugar - 1 pkg
- oatmeal - 2 c
- wheat germ - 1/2 c
- sunflower oil - 1 c
- shredded wheat - 2 c
- bran health food stores have this - 2 c
How to make muffins:
Pour 1 cup boiling water over cereal; mix thoroughly. Add oil and brown sugar; mix again. Add the buttermilk, eggs, soda and salt (optional); work in flour gradually. Cover; let stand in refrigerator. Bake for 20 minutes at 400°.Will keep for 6 weeks or more. May add dates, raisins or even jam can be used. You can make 2 or 20 at one time. Good for breakfast.
