Ingredients/Components

  • eggs - 5 item
  • flour - 5 c
  • buttermilk - 1 qt
  • baking soda - 5 tsp
  • boiling water - 1 c
  • dark brown sugar - 1 pkg
  • oatmeal - 2 c
  • wheat germ - 1/2 c
  • sunflower oil - 1 c
  • shredded wheat - 2 c
  • bran health food stores have this - 2 c

How to make muffins:

Pour 1 cup boiling water over cereal; mix thoroughly. Add oil and brown sugar; mix again. Add the buttermilk, eggs, soda and salt (optional); work in flour gradually. Cover; let stand in refrigerator. Bake for 20 minutes at 400°.

Will keep for 6 weeks or more. May add dates, raisins or even jam can be used. You can make 2 or 20 at one time. Good for breakfast.
