Monterey beans and cheese
Ingredients/Components
- medium onion, sliced - 1/2 item
- green pepper, diced - 1/2 item
- cooked kidney beans - 2 c
- ripe tomatoes - 2 item
- tomato sauce - 3/4 c
- chili powder optional - 1 tsp
- salt and pepper to taste - 1 item
How to make monterey beans and cheese:
Fry the first 3 ingredients. Add the remaining ingredients. Cook, slowly, stirring until blended, about 5 minutes. Sprinkle 1/4 to 1/2 pound Cheddar cheese on top. Put lid on for 2 minutes or until cheese is melted. Serve on top of rice or mix with rice.Recipe categories: Low fat, Main dish, Beans.
