Minted lamb kebabs
Ingredients/Components
- oil - 2 Tbsp
- vinegar - 2 Tbsp
- honey - 2 Tbsp
- cloves garlic, crushed - 2 item
- chopped fresh mint
- cup vegetable broth - 1/2 item
- lean lamb, cut into cubes - 1 lb
- onions, cut into large cubes - 2 item
- red peppers, cut into large cubes - 2 item
- spring onions, cut into 4-cm 1-1/2-inch lengths - 6 item
How to make minted lamb kebabs:
Marinade:3 Tbsp. chopped fresh mint2 cloves garlic, crushed2 Tbsp. honey1/2 cup vegetable broth2 Tbsp. vinegar2 Tbsp. oil To prepare marinade, combine ingredients in a bowl. Add lamb, cover and marinate for at least 1 hour or overnight.Thread lamb, onion, red pepper and spring onion pieces alternately onto skewers. Brush with remaining marinade and grill for 2 minutes each side or until golden brown and cooked. Serve with bread and salad. Serves 4.
