Microwave peanut brittle
Ingredients/Components
- sugar - 1 c
- vanilla - 1 tsp
- salt - 1/4 tsp
- butter - 1 Tbsp
- baking soda - 1 tsp
- light corn syrup - 1/2 c
- raw, skinless peanuts - 1 c
How to make microwave peanut brittle:
Combine sugar, corn syrup, peanuts and salt in a 2-quart glass casserole. Stir well. Microwave on High for 8 to 9 minutes. Mixture will be light brown in color. Add butter and vanilla. Blend thoroughly. Microwave on High 1 to 3 minutes or until mixture reaches the hard crack stage (300°). Stir in soda quickly. Pour onto a greased slab. Let cool for 1 hour. Break into small pieces. Store in airtight containers.Note: Roasted, salted peanuts may be used and added as last ingredient, but omit salt. Makes 1 pound.
