Ingredients/Components

  • sugar - 2/3 c
  • eggs - 8 item
  • vanilla - 2 tsp
  • salt - 1/4 tsp
  • evaporated milk
  • light brown sugar - 1/2 c

How to make mexican flan:

Beat eggs well. Add sugar and salt. Beat in evaporated milk and vanilla. Sprinkle brown sugar in bottom of loaf pan. Gently pour mixture over brown sugar. Place pan in shallow baking pan containing hot water.

Bake 1 hour at 350° until knife inserted in center comes out clean. Refrigerate overnight.

Before serving, run knife around edge and turn out on a small platter.

To enhance flavor, sprinkle thin layer of brown sugar on top and broil lightly before serving. Serves 8.
