Ingredients/Components

  • chili powder - 1/2 tsp
  • grated cheese - 1/2 lb
  • can Ro-Tel tomatoes - 1 item
  • salt and pepper to taste - 1 item
  • minced onion - 1 item
  • tortilla chips - 1 item
  • cans cream of chicken soup - 2 item
  • boned, diced chicken save broth - 1 item

How to make mexican chicken:

Combine diced chicken, tomatoes, cheese, onions and seasonings. Dip chips into chicken broth and line them along flat baking dish; sides and bottom. Cover with chicken mixture. Add soup and bake until completely hot at 350° for 1 1/2 hours. For less spicy and moist, drain Ro-Tel tomatoes. Serves 6 to 8.
