Ingredients/Components

  • chopped walnuts - 1/2 c
  • salad oil - 1/4 c
  • chopped celery - 2 c
  • wine vinegar - 3 Tbsp
  • minced onion - 1 Tbsp
  • can red kidney beans - 1 lb
  • each: salt and pepper - 1/2 tsp
  • small sweet pickles, chopped - 4 item

How to make mexican bean salad:

Drain beans well, then add celery, onion, walnuts and pickles. Shake oil, vinegar, salt and pepper; toss with mixture. Serve on lettuce.
