Ingredients/Components

  • eggs - 1/2 doz
  • salt - 4 Tbsp
  • ketchup - 1/2 c
  • ground beef - 4 lb
  • bread crumbs
  • Accent - 1/2 tsp
  • onion, chopped fine - 1 item
  • green pepper, chopped fine - 1 item
  • black or white pepper - 2 Tbsp
  • ground garlic - 1 tsp
  • stalk celery, chopped fine a small stalk - 1/2 item

How to make meat loaf:

Combine chopped onions, celery and green peppers. Saute in hot frypan for 3 to 5 minutes and remove. Combine with the meat, eggs, salt, pepper, garlic, ketchup and the bread crumbs. Mix all ingredients well. Make into 2 medium loaves. Place in a greased baking pan and bake for 1 1/2 hours, covered, in preheated 325° oven. After the 1 1/2 hours, remove the cover and continue to cook for another 15 minutes so the top of the meat loaf will brown. Remove from the pan and serve hot or cold. Serves 12 to 14. Serve with brown gravy.

Side dishes: boiled cabbages, green beans, mashed potatoes, mixed vegetables, candied sweet potatoes or lima beans.
