Marinated vegetables
Ingredients/Components
- salt - 1 Tbsp
- water
- vegetable oil - 1/2 c
- cider vinegar - 1 c
- bay leaf - 1 item
- whole black peppercorns - 1/2 tsp
- fresh mushrooms, washed and left whole - 1 lb
- medium stalks fresh broccoli, cut into pieces - 3 item
- stalks green celery, cut into 1-inch lengths - 3 item
- small head cauliflower, cut in pieces - 1 item
- fresh thyme, oregano and parsley - 1/4 tsp
- clove garlic, cut in half and crushed - 1 item
How to make marinated vegetables:
Marinade:1 1/2 c. water1 c. cider vinegar1/2 c. vegetable oil1 Tbsp. salt1/2 tsp. whole black peppercorns1/4 tsp. fresh thyme, oregano and parsley1 bay leaf1 clove garlic, cut in half and crushed Mix all marinade ingredients together in a large bowl. Add vegetables, cover and chill at least 24 hours (no more than 48 hours) before serving. Stir occasionally. Remove from marinade before serving.Recipe categories: Salads, Side dish, Vegetables.
