Ingredients/Components

  • salt - 1/2 tsp
  • pepper - 1/4 tsp
  • chopped onion - 2 c
  • chopped fresh parsley - 1/2 c
  • olive oil - 2 tsp
  • minced fresh basil - 1/4 c
  • small garlic cloves, minced - 8 item
  • minced fresh oregano - 2 tsp
  • fennel seeds, crushed - 1 tsp
  • peeled, seeded and chopped tomato - 8 c

How to make marinara sauce:

Coat a large saucepan with cooking spray; add oil and place over medium heat until hot. Add onion and garlic; saute for 3 minutes or until tender. Stir in tomato and remaining ingredients; bring to a boil. Reduce heat and simmer, uncovered, 30 minutes, stirring occasionally.

Add 3 cups tomato mixture to a food processor (or blender) and process until smooth. Add tomato puree back to tomato mixture in saucepan; bring to a boil. Reduce heat and simmer, uncovered, 15 minutes, stirring occasionally. Serve over pasta, fish or chicken.
