Ingredients/Components

  • sugar - 1 c
  • butter or margarine - 2 Tbsp
  • cornstarch - 1/4 c
  • cream of tartar - 1/4 tsp
  • hot water
  • grated lime peel - 1 Tbsp
  • egg yolks, beaten - 4 item
  • 9-inch baked pastry shell - 1 item
  • Meringue:4 egg whites
  • to 2 drops green food coloring - 1 item
  • fresh lime juice about 4 limes - 1/2 c

How to make lime meringue pie:

Meringue:4 egg whites1/4 tsp. cream of tartar1/3 c. sugar In saucepan, combine hot water, sugar, lime juice and coloring. Dissolve cornstarch in cold water. Stir in. Cook and stir over medium heat until mixture begins to thicken. Remove from heat. Gradually whisk in yolks; return to heat. Whisk in butter and lime peel; cook and stir 5 to 7 minutes to melt butter and thicken. Cool. Pour into prepared shell.

Prepare meringue in mixing bowl; beat egg whites and cream of tartar until foamy. Gradually beat in sugar. Beat until stiff peaks form. Spoon over filling. Bake in 325° oven for 15 to 20 minutes until golden. Cool and chill.
