Ingredients/Components

  • sugar
  • eggs - 2 item
  • flour - 1 c
  • coconut - 1/2 c
  • confectioners sugar - 1/4 c
  • baking powder - 1/2 tsp
  • lemon juice - 2 Tbsp
  • melted butter or margarine - 1/2 c
  • lemon peel - 2 tsp

How to make lemon squares:

Topping:1 c. sugar1/2 tsp. baking powder2 eggs2 Tbsp. lemon juice2 tsp. lemon peel1/2 c. coconut Combine flour, confectioners sugar and butter or margarine. Stir until it forms a ball. Press in greased 8 x 8-inch pan. Bake 15 minutes in 350° oven.

Mix well sugar, baking powder, eggs, lemon juice, lemon peel and coconut and pour over warm baked crust. Bake 20 to 25 minutes more. Do not overbake. Makes 16 squares. If desired, sprinkle with powdered sugar.
