Coconut cream pie
Ingredients/Components
- sugar - 1/2 c
- eggs - 4 item
- vanilla - 1 tsp
- milk - 2 c
- butter
- cornstarch - 3 Tbsp
- coconut - 3/4 c
- pinch of salt - 1 item
- cream of tartar - 1/2 tsp
- Meringue:4 eggs
How to make coconut cream pie:
Meringue:4 eggs1/2 tsp. cream of tartar1/3 c. sugar Mix together sugar, cornstarch, egg yolks and salt. Stir in milk and cook over medium heat until boiling, stirring constantly. Mixture will become thick. Remove from heat and stir in coconut, vanilla and butter; this creates the custard.Beat egg whites with cream of tartar and when frothy, add sugar; this creates the meringue.
Pour custard filling into baked pie shell. Put stiff egg white mixture on top of custard filling, then sprinkle with coconut. Bake at 350° until lightly brown on top.
