King ranch chicken
Ingredients/Components
- can cream of chicken soup - 1 item
- can chicken broth - 1 item
- medium onion - 1 item
- can cream of mushroom soup - 1 item
- chicken - 1 item
- corn tortillas - 12 item
- grated Velveeta Mexican cheese - 2 c
- can Ro-Tel diced chili and tomatoes - 1 item
How to make king ranch chicken:
Microwave chicken 9 to 10 minutes per pound (or cook in water). Cut tortillas into 2 x 1-inch pieces. Chop onion.Spray 9 x 12 x 2-inch pan with Pam. Layer tortillas, chicken, onions and cheese until everything is gone, ending with a cheese layer. Combine soups and tomatoes and heat until blended. Pour over casserole. Bake, uncovered, for 1 hour at 350°. Can be refrigerated for a day before eating or made ahead and frozen.
