- oil - 1/2 c
- Velveeta cheese - 1/2 lb
- chopped onion - 2 c
- salt and pepper to taste - 1 item
- stick oleo - 1 item
- rice - 2 c
- chicken or beef broth - 4 c
- jalapeno peppers, chopped - 1/4 1/2
How to make jalapeno rice:
In a large, heavy pot, fry rice in oil, but do not brown. Add onion, jalapeno peppers, broth, oleo, salt and pepper. Bring to a boil. Add cheese that has been cut into small pieces; bring to a boil.
