  • cream cheese
  • eggs - 5 item
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • milk - 1 c
  • flour - 2 c
  • stick margarine - 1 item
  • coconut - 6 oz
  • shortening - 1/2 c
  • powdered sugar - 1 lb
  • pecan halves - 24 item
  • coconut or more - 3 oz

How to make italian cream cake:

Icing:8 oz. cream cheese1 stick margarine1 lb. powdered sugar1 tsp. vanilla1/2 c. chopped pecans6 oz. coconut24 pecan halves Cake: Beat sugar, margarine and shortening until fluffy. Beat in eggs, 1 at a time. Add vanilla, pecans and coconut and mix well. Add flour and mix. Bake in 3 greased and floured pans at 350° for 25 minutes. Cool and frost.

Icing: Mix cream cheese and margarine. Beat in sugar and vanilla. Spread on layers, dusting 1st and 2nd layers with pecans and coconut. Frost top and sides. Press 12 pecan halves evenly around top edge and bottom edge of 1st layer.
