Indian relish
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- salt - 6 Tbsp
- vinegar - 3 c
- turmeric - 1 tsp
- cabbage, chopped - 2 c
- large onions - 2 item
- green tomatoes - 12 item
- large sweet green peppers - 4 item
- large sweet red peppers - 4 item
- cucumbers about 6-inches long - 6 item
How to make indian relish:
Chop vegetables. Stir in the salt. Let sit for at least 3 hours (or longer). Drain as much of the brine off as possible. Add sugar, vinegar and spices. Mix well. Let boil 3 minutes. Pack 1/2-inch from top of jars. Process in water bath 5 minutes.Recipe categories: Low protein, Sauces, Condiments, etc..
