- baking soda - 1/4 tsp
- low-fat buttermilk
- egg, lightly beaten - 1 item
- self-rising cornmeal
- Crisco shortening or Crisco oil, divided - 2 Tbsp
How to make hoe cakes:
Combine cornmeal and baking soda in medium bowl. Add buttermilk, egg and one tablespoon melted shortening. Stir just until dry ingredients are moistened. Heat 1 tablespoon Crisco shortening or Crisco oil on medium-high heat in heavy large nonstick skillet. Pour 1/4 cup batter into skillet for each hoe cake. Fry 1 to 2 minutes or until golden brown on each side. Drain on paper towels. Serve immediately. Makes 6 servings.
