Hashed brown potatoes
Ingredients/Components
- butter or margarine - 3 tsp
- salt - 1 tsp
- dash of pepper - 1 item
- grated onion - 1 tsp
- bacon fat - 3 tsp
- medium potatoes, peeled and cooked - 4 item
How to make hashed brown potatoes:
Grate potatoes coarsely; toss in onion, salt and pepper. In 10-inch skillet, over high heat, heat butter with bacon fat; add potatoes. Press firmly with turner; shape into circle, leaving 1/2 inch trough around edges. After 12 to 15 minutes, lift potatoes to see if brown.When they are brown, hold skillet with left hand and cut through potatoes from far edge to center. Then fold these two quarters onto uncut half. Loosen with turner. Turn onto platter. Makes 4 servings.
