Gingerbread pound cake



  • margarine or butter - 1 c
  • all-purpose flour - 2 c
  • ground ginger - 1 tsp
  • packed brown sugar - 3/4 c
  • eggs - 4 item
  • baking powder - 1 tsp
  • cinnamon - 1 tsp
  • molasses - 1/4 c

How to make gingerbread pound cake:

Let margarine or butter and eggs stand at room temperature for 30 minutes. In a large mixing bowl, stir together flour, baking powder, ginger and cinnamon; set aside.

In another large mixing bowl, beat margarine or butter with an electric mixer on medium speed for 30 seconds. Gradually add brown sugar, about 2 tablespoons at a time, beating on medium to high speed about 6 minutes total or until very light and fluffy. Add eggs, one at a time, beating for 1 minute after each addition, scraping sides of the bowl often. Beat in molasses. Gradually add flour mixture to butter mixture, beating on low speed just until combined.

Pour batter into a greased and floured 5 x 9-inch loaf pan. Bake in a 325° oven for 55 to 65 minutes or until toothpick inserted near center comes out clean. Cool on a wire rack for 10 minutes. Remove cake from pan. Cool thoroughly on a wire rack.
