Green tomato pickles
Ingredients/Components
- sugar - 5 lb
- cinnamon - 1 tsp
- water - 2 gal
- ginger - 1 tsp
- cloves - 1 tsp
- allspice - 1 tsp
- celery seed - 1 tsp
- white vinegar - 4 qt
- mace - 1 tsp
- lime - 3 c
- green sliced tomatoes not too big - 7 lb
How to make green tomato pickles:
Soak tomatoes in water and lime for 24 hours. Wash good. Soak washed tomatoes in cold ice water 4 hours. Tie spices in little bag and put in with sugar and vinegar and bring to a boil. Pour over drained tomatoes and let stand overnight. Bring to boil and boil for 1 hour. Put in hot jars and seal.Shared by Aunt Waldene.
