Ginger beer
Ingredients/Components
- sugar to taste - 1 item
- fresh ginger - 1 lb
- 8 c - 1/2 gal
- pineapple juice * - 1/2 gal
- whole cloves or 1 stick cinnamon optional - 1 tsp
How to make ginger beer:
*Juices of other fruits; e.g., 2 or 3 limes or lemons, diluted with enough water to make 8 cups may be substituted for pineapple.Wash and scrape off ginger. Grind ginger to a pulp. Add 1/2 gallon of boiling water to it. Let it stand for an hour. Strain through cloth. Squeeze to extract flavor from pulp. Stir in juice and spices (if used). Let stand in warm place for another hour. Allow starch from ginger to settle at bottom. Sweeten to taste and chill.
