Giant ginger cookies
Ingredients/Components
- sugar - 2 c
- cinnamon
- eggs - 2 item
- salt - 1/4 tsp
- flour
- baking soda - 2 tsp
- shortening
- molasses - 1/2 c
- ginger - 4 tsp
- cloves - 1 tsp
- sugar for coating - 1/4 c
How to make giant ginger cookies:
Mix together with mixer the shortening and sugar until fluffy. Add eggs and molasses and mix on slow speed until blended. Add flour mixture a little at a time. The dough will be stiff.Use 1/4 c. measure for scoop. Roll into 2-inch balls. Roll balls in sugar to coat. Place on ungreased cookie sheet. Bake 350° for 12 - 14 mins or light brown. Cool 5 min. before removing from sheet to cooling rack. Makes 4 -5 dozen.
