Fruit tarts
Ingredients/Components
- granulated sugar - 1/4 c
- vanilla extract - 1/4 tsp
- salt - 1/8 tsp
- flour - 1 Tbsp
- currant jelly - 1/4 1/2
- egg, well beaten - 1 item
- heavy cream, whipped - 1/2 c
- scalded milk - 1/2 c
- washed, hulled berries
- baked 3-inch tart shells - 6 item
How to make fruit tarts:
Make and bake tart shells. Scald milk. Mix sugar, salt and flour with beaten egg and pour scalded milk slowly over this mixture, stirring constantly; then return to double boiler and cook until thick, stirring constantly. Add vanilla; cool. Just before using, fold in half the whipped cream; place layer of berries on top. Heat currant jelly until it melts and put about 1 tablespoon on top of each tart.
