Ingredients/Components

  • granulated sugar - 1/4 c
  • vanilla extract - 1/4 tsp
  • salt - 1/8 tsp
  • flour - 1 Tbsp
  • currant jelly - 1/4 1/2
  • egg, well beaten - 1 item
  • heavy cream, whipped - 1/2 c
  • scalded milk - 1/2 c
  • washed, hulled berries
  • baked 3-inch tart shells - 6 item

How to make fruit tarts:

Make and bake tart shells. Scald milk. Mix sugar, salt and flour with beaten egg and pour scalded milk slowly over this mixture, stirring constantly; then return to double boiler and cook until thick, stirring constantly. Add vanilla; cool. Just before using, fold in half the whipped cream; place layer of berries on top. Heat currant jelly until it melts and put about 1 tablespoon on top of each tart. Top with teaspoon of whipped cream. Serves 6.
