Ingredients/Components
- granulated sugar - 3/4 c
- milk - 2 c
- vanilla extract - 1/2 tsp
- all-purpose flour - 1/3 c
- dash of salt - 1 item
- vanilla wafers - 1 item
- eggs, separated at room temperature - 4 item
How to make fruit cocktail pudding:
Combine 1/2 cup sugar, flour and salt in top of double boiler. Stir in 4 egg yolks and milk; blend well. Cook, uncovered, over boiling water, stirring constantly, until thickened. Reduce heat and cook, stirring constantly, for 5 minutes. Remove from heat; add vanilla and fruit cocktail; blend well.Pour about 1/3 of custard on bottom of dish. Layer with wafers, custard, wafers and then end with custard on top. Beat egg whites until stiff; gradually add remaining 1/4 cup sugar and beat until peaks form. Spoon on top of custard, sealing to edge of dish. Bake at 425° for 5 minutes or until brown.
