Fresh green bean salad
Ingredients/Components
- salt - 3/4 tsp
- mayonnaise - 1/3 c
- black pepper - 1/2 tsp
- grated lemon peel - 1/2 tsp
- fresh green beans - 2 lb
- small tomatoes, cut in thin wedges - 3 item
- small red onion, sliced in thin slices - 1 item
How to make fresh green bean salad:
Clean and cut string beans at an angle. In 12-inch skillet, put string beans in 1/2-inch boiling water. Bring to a boil over high heat again. Reduce heat to low, cover and simmer 10 minutes or until barely tender. Drain beans well.In a large bowl, whisk together mayonnaise, salt, pepper and lemon peel. Add the green beans and tomato wedges; toss well to coat.
Spoon salad onto a platter and sprinkle onion over top. Serve warm or cover, refrigerate and serve cold later. Serves 6 to 8 side servings.
