  • sugar - 1 c
  • chopped pecans - 1/2 c
  • pkg - 1 oz
  • milk - 3 c
  • butter or margarine - 1/2 c
  • semi-sweet chocolate morsels - 1/2 c
  • 4 oz
  • carton frozen whipped topping, thawed - 1 oz

How to make eclair cake:

Layer one-third of graham crackers in a 13 x 9 x 2-inch dish. Combine pudding mix and 3 cups of milk in a large bowl. Beat at low speed with an electric mixer until blended, about 2 minutes. Fold in whipped topping. Spoon half of mixture on graham crackers. Repeat layers, ending with graham crackers.

Combine sugar, butter and 1/3 cup of milk in a saucepan. Bring to a boil, stirring constantly. Boil 1 minute, stirring often. Remove from heat. Stir in morsels. Spoon over crackers and top with pecans. Cover and chill several hours. Yields 12 to 15 servings.
