Curried rice salad
Ingredients/Components
- salt - 2 tsp
- water - 2 c
- vinegar - 1 Tbsp
- raisins - 1/2 c
- salad oil - 2 Tbsp
- chopped celery - 1 c
- curry powder - 1/2 tsp
- mayonnaise - 1/2 c
- rice - 1 c
- jicama - 1/2 c
- salted peanuts - 1/2 c
- green onion, minced - 1/2 c
- cooked frozen peas this can be increased - 1 c
How to make curried rice salad:
Cook rice according to package instructions. Cool and fluff rice with a fork. Mix onion, vinegar, salad oil, curry powder and salt. Add to cooled rice and refrigerate at least 3 hours. Combine remaining ingredients with rice before serving.For ease of transportation the celery, peas, mayonnaise, peanuts, raisins and jicama may be layered over rice and mixed before serving.
