Ingredients/Components

  • salt - 1 tsp
  • curry powder - 1 tsp
  • fresh orange juice - 1/4 c
  • dried lentils - 1 c
  • balsamic vinegar - 1 Tbsp
  • freshly ground black pepper to taste - 1 item
  • extra virgin olive oil - 2 Tbsp
  • minced red onion - 1/4 c
  • minced orange zest - 1 tsp
  • crunchy fresh small sprouts or celery
  • coarsely chopped fresh mint leaves - 1/2 c

How to make crunchy lentil salad:

Bring a saucepan of lightly salted water to a boil and add the lentils. Reduce the heat and simmer until crisp-tender, about 30 minutes. Drain the lentils; rinse them under cold water and pat dry. Place them in a salad bowl and add all the remaining ingredients. Toss well to combine. Cover and refrigerate for several hours (to develop the flavors) before serving. Makes 4 to 6 portions.
