Crunchy lentil salad
Ingredients/Components
- salt - 1 tsp
- curry powder - 1 tsp
- fresh orange juice - 1/4 c
- dried lentils - 1 c
- balsamic vinegar - 1 Tbsp
- freshly ground black pepper to taste - 1 item
- extra virgin olive oil - 2 Tbsp
- minced red onion - 1/4 c
- minced orange zest - 1 tsp
- crunchy fresh small sprouts or celery
- coarsely chopped fresh mint leaves - 1/2 c
How to make crunchy lentil salad:
Bring a saucepan of lightly salted water to a boil and add the lentils. Reduce the heat and simmer until crisp-tender, about 30 minutes. Drain the lentils; rinse them under cold water and pat dry. Place them in a salad bowl and add all the remaining ingredients. Toss well to combine. Cover and refrigerate for several hours (to develop the flavors) before serving.
