Creamed spinach
Ingredients/Components
- sour cream - 1/4 c
- butter or margarine - 1/4 c
- paprika - 1 item
- ground nutmeg - 1/8 tsp
- pepper - 1/4 tsp
- salt to taste - 1 item
- medium onion, chopped - 1 item
- clove garlic, crushed - 1 item
- fresh spinach - 1 lb
How to make creamed spinach:
Wash spinach thoroughly. Remove stems. Tear leaves into large pieces. Cook in a small amount of boiling water 5 to 10 minutes or until tender. Drain. Place on paper towels and squeeze until barely moist. Melt butter in a large skillet; saute onion and garlic until tender. Stir in next 4 ingredients. Add the spinach and cook over low heat until thoroughly heated. Sprinkle with paprika. Serves 4.Recipe categories: Low protein, Low calorie, Low Carb.
