Ingredients/Components

  • sour cream - 1/4 c
  • butter or margarine - 1/4 c
  • paprika - 1 item
  • ground nutmeg - 1/8 tsp
  • pepper - 1/4 tsp
  • salt to taste - 1 item
  • medium onion, chopped - 1 item
  • clove garlic, crushed - 1 item
  • fresh spinach - 1 lb

How to make creamed spinach:

Wash spinach thoroughly. Remove stems. Tear leaves into large pieces. Cook in a small amount of boiling water 5 to 10 minutes or until tender. Drain. Place on paper towels and squeeze until barely moist. Melt butter in a large skillet; saute onion and garlic until tender. Stir in next 4 ingredients. Add the spinach and cook over low heat until thoroughly heated. Sprinkle with paprika. Serves 4.
