Cranberry delight salad
Ingredients/Components
- chopped pecans - 1/2 c
- pkg - 1 oz
- sour cream - 2 c
- water - 1 c
- nutmeg - 1/2 tsp
- lemon juice - 3 Tbsp
- can whole cranberry sauce - 1 oz
- can crushed pineapple, drained reserve juice - 1 oz
- lemon peel, grated - 1 tsp
How to make cranberry delight salad:
Combine pineapple juice and water to make 2 cups. Heat to boiling. Add Jell-O and stir to dissolve. Stir in cranberry sauce, lemon juice, peel and nutmeg. Chill until mixture thickens slightly. Add sour cream; stir until thoroughly combined. Fold in pineapple and pecans. Pour into an 8-cup mold. Chill until firm. Unmold onto a serving plate. Garnish with fresh strawberries and lemon twists, if desired. Yields 12 servings.Recipe categories: Desserts, Low protein, Salads.
