  • eggs - 2 item
  • milk - 1/2 c
  • salt - 1 tsp
  • flour - 1 c
  • baking powder - 1 tsp
  • can whole kernel corn - 1 oz
  • melted oil - 1 tsp

How to make corn fritters:

Beat eggs with milk and oil. Blend in flour, baking powder and salt. Add the drained canned corn to the batter. Heat shortening or vegetable oil to 375°. Oil should be 1 inch deep in the kettle. Drop the batter by spoonfuls into the hot oil. Cook 1 side until golden brown, then turn to cook other side. Only turn the fritters once. Remove from oil when done and place on absorbent paper. Serve hot with syrup.
