Ingredients/Components
- eggs - 2 item
- milk - 1/2 c
- salt - 1 tsp
- flour - 1 c
- baking powder - 1 tsp
- can whole kernel corn - 1 oz
- melted oil - 1 tsp
How to make corn fritters:
Beat eggs with milk and oil. Blend in flour, baking powder and salt. Add the drained canned corn to the batter. Heat shortening or vegetable oil to 375°. Oil should be 1 inch deep in the kettle. Drop the batter by spoonfuls into the hot oil. Cook 1 side until golden brown, then turn to cook other side. Only turn the fritters once. Remove from oil when done and place on absorbent paper.
