  • eggs - 2 item
  • milk - 1/4 c
  • salt - 1 tsp
  • baking powder - 1 tsp
  • sifted flour - 1 c
  • melted shortening - 1 Tbsp
  • cooked whole kernel corn
  • oil, heated for deep fat frying - 1 item

How to make corn fritters:

Combine flour, salt and baking powder. Beat eggs with milk. Add melted shortening and corn. Combine 2 mixtures lightly. Drop by tablespoon into shallow oil. Fry until brown and cooked in center, about 4 to 5 minutes. Drain on absorbent paper.
