- carrots - 2 pkg
- large onion - 1 item
- large green pepper - 1 item
- can tomato soup - 1 item
- salad oil - 1/2 c
- sugar - 2/3 c
- vinegar - 3/4 c
- mustard - 1 tsp
- Worcestershire - 1 tsp
How to make copper pennies:
Boil carrots in salted water until tender but still crisp; cool. Slice in thin rounds. Alternate carrots, chopped green pepper and chopped onion in bowl. Pour sauce over and marinate for several days in refrigerator. Keeps several weeks.Recipe categories: Low protein, Low sodium, Salads.
