Connecticut beef supper
Ingredients/Components
- milk - 3/4 c
- sour cream - 3/4 c
- salt - 1 tsp
- vegetable oil - 2 Tbsp
- pepper - 1/4 tsp
- bread crumbs
- shredded Cheddar cheese - 2 c
- can cream of mushroom soup - 1 1/2
- can mushrooms - 1 1/2
- large onions, sliced - 2 item
- beef stew meat, cut into 1-inch cubes - 2 lb
- medium potatoes, pared and thinly sliced - 4 item
How to make connecticut beef supper:
Brown meat and onions in oil; pour off oil. Drain mushrooms (reserve liquid). Add water to reserved mushroom liquid to make 1 cup. Stir mushrooms and liquid into beef mixture. Heat to boiling. Reduce heat, cover and simmer for 2 hours, until meat is tender.Pour meat into 9 x 13-inch baking dish. Arrange sliced potatoes over meat. Mix soup, milk, sour cream, salt and pepper; pour over potatoes. Sprinkle with cheese. Bake, uncovered, until potatoes are tender, about 20 to 30 minutes. Bake in 350° oven.
