- medium potatoes, peeled and quartered - 6 item
- shredded cabbage - 4 c
- chopped onion - 1 c
- butter - 1/4 c
- milk - 1/2 3/4
- salt - 1 tsp
- pepper - 1/8 tsp
- snipped parsley - 1 Tbsp
How to make colcannon:
Cook potatoes; drain. Meanwhile combine cabbage and onion and cook in a small amount boiling salted water for 15 minutes; drain. Mash potatoes using electric mixer.
