Ingredients/Components

  • medium potatoes, peeled and quartered - 6 item
  • shredded cabbage - 4 c
  • chopped onion - 1 c
  • butter - 1/4 c
  • milk - 1/2 3/4
  • salt - 1 tsp
  • pepper - 1/8 tsp
  • snipped parsley - 1 Tbsp

How to make colcannon:

Cook potatoes; drain. Meanwhile combine cabbage and onion and cook in a small amount boiling salted water for 15 minutes; drain. Mash potatoes using electric mixer. Beat in butter and as much milk as necessary to make fluffy. Add salt and pepper.
