Ingredients/Components
- sugar - 2 c
- eggs - 5 item
- salt - 1 tsp
- flour - 2 c
- water - 1/4 c
- buttermilk - 1 c
- baking powder
- Crisco - 1 c
- can coconut
- coconut extract - 2 tsp
How to make coconut pound cake:
Glaze:1/2 c. sugar1/4 c. water4 tsp. coconut extract Cream the Crisco and sugar. Add eggs, one at a time, beating each for 2 minutes. Sift together the flour, baking powder and salt. Add sifted ingredients alternately with buttermilk, extract and coconut. Grease and flour tube pan. Bake at 350° for 1 hour. Cool in pan 10 minutes, then remove to plate.Boil glaze ingredients 1 minute. Pour over cake and let drip down sides.
