  • sugar - 2 c
  • eggs - 5 item
  • salt - 1 tsp
  • flour - 2 c
  • water - 1/4 c
  • buttermilk - 1 c
  • baking powder
  • Crisco - 1 c
  • can coconut
  • coconut extract - 2 tsp

How to make coconut pound cake:

Glaze:1/2 c. sugar1/4 c. water4 tsp. coconut extract Cream the Crisco and sugar. Add eggs, one at a time, beating each for 2 minutes. Sift together the flour, baking powder and salt. Add sifted ingredients alternately with buttermilk, extract and coconut. Grease and flour tube pan. Bake at 350° for 1 hour. Cool in pan 10 minutes, then remove to plate.

Boil glaze ingredients 1 minute. Pour over cake and let drip down sides.
