Coconut orange cake
Ingredients/Components
- milk - 2 Tbsp
- butter or margarine - 1 Tbsp
- salt - 1/8 tsp
- baking soda - 1/4 tsp
- egg - 1 item
- cup sugar - 1 item
- cup all-purpose flour - 1 item
- cup packed brown sugar - 1/2 item
- cup flaked coconut - 2/3 item
- Mandarin oranges, drained - 1 can
How to make coconut orange cake:
In a mixing bowl, combine the sugar, flour, baking soda and salt. Add mandarin oranges and egg; beat on medium speed for 2 minutes. Pour into a greased 8 inch square baking pan. Bake at 350 degrees for 30 - 40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack for 15 minutes.Meanwhile, in a saucepan, combine the brown sugar, butter and milk. Bring to a boil over medium heat, stirring occasionally. Cook and stir for 2 minutes or until sugar is dissolved.
Remove from heat; stir in coconut. Pour over warm cake. Broil 6 inches from the heat for 1 - 2 minutes or until top is browned. Watch carefully, will burn quickly.
