  • sugar - 1 c
  • vanilla - 2 tsp
  • milk - 3 c
  • butter - 1 Tbsp
  • cornstarch - 4 Tbsp
  • egg yolks - 3 item
  • cold water - 1 item
  • baked pie crust - 1 item
  • Heat milk to boiling
  • coconut reserve 1/4 c - 1 c

How to make coconut cream pie:

Mix eggs, sugar and cornstarch together with enough cold water to make paste. Heat milk to boiling. Add egg mixture and cook until thick. Remove from heat and add 3/4 cup coconut, butter and vanilla. Pour into pie crust and top with meringue and remaining coconut. Bake at 300° for 20 minutes.Meringue:2 egg whites4 Tbsp. sugar Beat egg whites, adding sugar gradually, beating to a stiff foam.
