- eggs - 4 item
- vanilla - 1/2 tsp
- pkg - 1 oz
- milk - 2 tsp
- water
- coconut - 2 c
- oil - 1/4 c
- sifted confectioners sugar
- yellow cake mix - 1 pkg
- chopped walnuts or pecans - 1 c
- 4 serving size Jell-O vanilla instant pudding - 1 pkg
- Pour in 3 9-inch cake pans
How to make coconut cake:
Mix well. Pour in 3 (9-inch) cake pans. Bake at 350° for 35 minutes. Ice with Coconut Cream Cheese Frosting.Coconut Cream Cheese Frosting:4 Tbsp. butter or margarine2 c. coconut1 (8 oz.) pkg. cream cheese2 tsp. milk3 1/2 c. sifted confectioners sugar1/2 tsp. vanilla Melt 2 tablespoons butter in skillet. Add coconut; stir constantly over low heat until golden brown. Spread coconut on absorbent paper to cool. Cream 2 tablespoons butter with cream cheese. Add milk and sugar alternately, beating well. Add vanilla, stir in 1 3/4 cups coconut. Spread on top and sides of cake layers. Sprinkle with remaining coconut.Recipe categories: Desserts, Cakes, Egg.
