Ingredients/Components

  • butter - 3/4 c
  • sugar
  • cocoa - 3/4 c
  • flour - 3 c
  • baking soda - 3 tsp
  • baking powder
  • eggs - 2 item
  • rum liquor - 1/4 c
  • milk
  • very hot strong coffee, prepared - 1 c
  • vinegar - 1 tsp
  • vanilla - 1 tsp
  • salt optional - 1/2 tsp
  • Beat with mixer 5 minutes
  • shortening - 1/2 c
  • confectioners sugar - 4 c
  • milk more or less to desired consistency - 1/4 c

How to make chocolate rum cake:

Mix all ingredients. Beat with mixer 5 minutes. Place in 2 (9-inch) greased and floured pans. Bake at 350° for approximately 25 to 35 minutes until top of cake springs back when touched. Moist cake.

Note: If you do not use rum, increase milk to 1 1/2 cups.White Icing:1/2 c. butter1/2 c. shortening4 c. confectioners sugar2 tsp. vanilla1/4 c. milk (more or less to desired consistency) Beat with mixer.
