  • sugar - 1 c
  • cinnamon - 1/2 tsp
  • eggs - 2 item
  • flour - 1 c
  • oil - 1/2 c
  • soda - 1/4 tsp
  • buttermilk - 1/2 c
  • baking powder - 1/2 tsp
  • pinch of salt - 1 item
  • cold mashed potatoes - 1/3 c
  • cocoa powder - 1/3 c
  • pinch of nutmeg - 1 item
  • powdered sugar to dust cake - 1 item

How to make chocolate potato cake:

Heat oven to 350°. In bowl, whisk together sugar, oil and eggs. Whisk in potatoes. Mix dry items together. Add dry items to creamed items and buttermilk. Spoon into cake pan. Bake 30 to 35 minutes until done when tested. Let cool 10 minutes. Invert onto plate, dust with powdered sugar, if desired.
